Ingredients
- ½ cup small sago pearls
- 2 ripe mangoes (peeled and diced)
- 1 cup coconut milk
- 2 tablespoons condensed milk (optional, for extra sweetness)
- 2 tablespoons sugar (adjust to taste)
- 1 pinch of salt
- 1 cup water (for cooking sago)
- Crushed ice or chilled water (for rinsing sago)
- Fresh strawberries
Method of Preparation
Cook the sago pearls
Bring 1 cup of water to a boil. Add sago pearls and stir continuously to prevent sticking.
Cook for 10–12 minutes until the pearls turn translucent with a small white dot in the center.
Drain and rinse under cold water or soak in crushed ice water to stop cooking and remove excess starch.
Prepare the coconut base
In a saucepan, combine coconut milk, sugar, condensed milk (if using), and a pinch of salt.
Warm gently over low heat until sugar dissolves. Do not boil.
Let it cool to room temperature, then refrigerate.
Assemble the dessert
In serving glasses or bowls, layer sago pearls, strawberry slices & diced mangoes.
Pour chilled coconut milk mixture over the top.
Stir gently to combine.
Serving and Garnishment
Serve chilled, ideally after refrigerating for 30 minutes to let the flavors meld.
Garnish with:
Extra mango cubes or mango puree drizzle and strawberry slices
Toasted coconut flakes
Mint leaves for a fresh touch
A sprinkle of sesame seeds or crushed peanuts for crunch
