Ingredients:

- 1/4 cup white vinegar
- 1 teaspoon sugar
- Pinch of salt
For the Spicy Mayo:
- 1/2 cup mayonnaise
- 1 tablespoon sriracha
- 1 teaspoon lime juice
Garnish & Extras:
- Toasted sesame seeds
- Sliced spring onions
- Fresh cilantro leaves
- Butter for toasting buns
Method of Preparation:
Start by preparing the pickled vegetables: combine vinegar, sugar, and a pinch of salt in a bowl, then toss in the carrots, cucumbers, and radish. Let it sit for at least 20 minutes to absorb flavor. While pickling, mix all the BBQ sauce ingredients in a saucepan over medium heat. Simmer for 5–7 minutes until slightly thickened, then set aside.
For the beef patties, mix ground beef with soy sauce, garlic powder, sesame oil, salt, and pepper. Form into 6 small patties and cook them on a grill or skillet over medium heat for about 3 minutes per side, basting generously with the Korean BBQ sauce as they cook.
