Ingredients
- 2 whole lobster tails (fresh or thawed)
- 2 tbsp Thai red curry paste
- 1 can (400ml) coconut milk
- 1 tbsp fish sauce
- 1 tsp palm sugar (or brown sugar)
- 1 tbsp vegetable oil
- 1 red chili (sliced, optional for heat)
- 1 kaffir lime leaf (torn)
- 1/2 cup Thai basil leaves
- 1/2 cup sliced red bell pepper
- Juice of 1 lime
- Salt to taste
Method of Preparation
- Prep the Lobster: Split lobster tails lengthwise. Lightly season with salt.
- Make the Curry Base: In a pan, heat oil and sauté red curry paste until fragrant. Add coconut milk gradually, stirring to blend.
- Flavor Boost: Stir in fish sauce, palm sugar, lime leaf, and chili. Simmer for 5 minutes.
- Cook the Lobster: Add lobster tails to the curry. Simmer gently for 6–8 minutes until lobster is opaque and tender.
- Finish with Veggies: Add bell pepper and Thai basil. Simmer for 2 more minutes. Squeeze in lime juice before serving.
Serving & Garnishment
– Serve hot over jasmine rice or coconut-infused sticky rice.
– Garnish with fresh Thai basil, lime wedges, and a sprinkle of sliced red chili for color and kick.
