A Taste Of Swahili Culture Under The Swahili Tree’s Rotisserie Chicken And Duck

Every day Under the Swahili Tree roasts chickens and ducks on their rotisserie. With either honey or Swahili spiced baste, reserve your bird by 12 pm to take away or dine in at 7 pm. The chicken comes with family chips, coleslaw, and mango kachumbari. The duck is served with Asian pancakes, pickles, onion, and mango sauce.

Emma has a team of amazing assistant chefs, bartenders, and waiters that help her to accomplish her daily goals.

 

Meet Emma Forbes, the Managing Director of Under The Swahili Tree Restaurant, whose passion for cooking was sparked at the tender age of 3. Growing up on the coast of Scotland, Emma’s parents instilled in her a love for fishing and cooking, which she carried with her when she moved to Kenya in the mid-90s. Over the years, Emma has travelled up and down the Kenyan Coast, researching, learning, and developing recipes while building relationships with local fishermen and farmers.

Before opening Under The Swahili Tree, Emma worked as an arts educator, teaching art in schools. In 2011, she opened The Shuka Duka, a shop that offers accessories and textile goods made from African fabrics, but her passion for cooking never waned.

Emma’s recipes use simple and easy-to-find ingredients, making them accessible to everyone. She believes that fresh seafood is the key to unlocking the best flavours and textures in her dishes.

In 2021, Emma released her first cookbook, Bahari Safari, which is a compilation of recipes based on Swahili food and culture. Her love for cooking and sharing her knowledge and passion with others is evident in every dish that comes out of her kitchen.
