Ingredients
- Firm tofu (cubed)

- Bamboo shoots
- Bell peppers (sliced)
- Oil (for frying and sautéing)
- Soy sauce or fish sauce
- Palm sugar
- Thai basil leaves (for garnish)
- Red chili (chopped, for garnish)
- Lime wedges (for serving)
- Steamed jasmine or sticky rice (to serve)
Method of Preparation
- Prepare Tofu: Lightly pan-fry the tofu cubes in oil until golden and crispy. Set aside.
- Sauté Aromatics: In a wok or large skillet, heat oil and sauté garlic, shallots, and lemongrass until fragrant.
- Cook Curry Paste: Add green curry paste to the aromatics, stirring well to release its flavors.
- Add Coconut Milk & Veggies: Pour in coconut milk and bring to a gentle simmer. Add eggplants, bamboo shoots, and bell peppers, cooking until tender.
- Combine Tofu: Return tofu to the pan and simmer for a few minutes to meld flavors.
- Season: Add soy sauce or fish sauce and palm sugar to balance flavors.
Serving
Serve the green curry tofu hot over steamed jasmine or sticky rice.
Garnishment
Top with fresh Thai basil leaves, chopped red chili for heat, and a wedge of lime to squeeze over before eating.
