Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger

  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/4 cup molasses or golden syrup
  • 1/4 cup milk

  • 1/2 cup fresh strawberries, halved
  • 2 tablespoons brown sugar
  • 3 tablespoons brandy
  • A pinch of ground cinnamon

Method of Preparation

Begin by creaming the butter and brown sugar until fluffy. Add the eggs one at a time, beating well after each addition. Stir in the molasses, then gently fold in the flour, spices, and baking powder alternately with milk until a smooth, thick batter forms. Lightly grease a pudding basin or ramekins and pour in the mixture, covering tightly with foil.
Steam the pudding over simmering water for about 60–75 minutes, checking occasionally to top up the water. The pudding is done when a skewer inserted comes out clean and the top springs back gently to the touch.

While the pudding steams, prepare the topping. In a small saucepan, gently sauté the apples in a bit of butter until tender. Add the strawberries, brown sugar, cinnamon, and brandy. Simmer for a few minutes until the fruits are soft but intact, and the sauce becomes syrupy.

Once your pudding is done, let it rest for 5 minutes before turning it out onto a plate.
