Ingredients:
- 1 whole turkey (4–5 kg)
- 1 cup unsalted butter, softened
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh sage, chopped
- 1 lemon, halved
- 1 onion, quartered
- 2 carrots, cut into chunks
- 2 celery sticks, cut into chunks
- Salt and freshly ground black pepper to taste
- 1 cup chicken or turkey stock
Method of Preparation:
- Preheat your oven to 180°C (350°F).
- In a bowl, mix the softened butter with garlic, rosemary, thyme, sage, salt, and pepper.
- Gently loosen the skin of the turkey breast and rub half of the herb butter underneath; rub the remaining butter all over the outside.
- Stuff the turkey cavity with lemon, onion, carrots, and celery. Tie the legs together with kitchen string and tuck the wings under.
- Place the turkey on a roasting pan, pour in the stock, and cover loosely with foil. Roast for 2–2.5 hours, basting occasionally. Remove foil in the last 45 minutes to brown the skin.
- Check that the internal temperature reaches 75°C (165°F) in the thickest part of the thigh before removing from the oven.
Serving & Garnishment:
Let the turkey rest for 20 minutes before carving to retain its juices. Serve on a festive platter garnished with fresh rosemary sprigs, cranberries, and roasted vegetables. Pair with classic sides like mashed potatoes, green beans, and a rich gravy for a complete Christmas feast.
